All the beef we sell is English stock from Quality Standard Farm Assured English Farms.
We have an excellent working relationship with Newman’s Abattoir, an independent family run producer in Hampshire, which allows us to specify which breeds of beef we stock and where in the country they come from.
Most of our beef is from traditional breeds of cattle such as Charolais, Limousin, British Blue and some Aberdeen Angus Crosses for the flavour and fat, favouring cattle from the South of England.
As a licensed cutting plant it is required by the Food Standards Agency that all our beef labelling is audited and overseen by the Government Department of Rural Payment & Affairs. We are fortunate that working with a small abattoir we receive animal Passports and movement history, allowing us to provide full traceability along all stages of our supply chain and Farm Assurance for every body of beef that we buy.
We also operate a fully audited beef maturing testing program, with regular sampling, and sensory and laboratory testing to ensure that the beef we sell once hung is safe to eat and of the best quality.
As a Fourth Generation Family Butchers we are one of the few butchers that still buy whole sides of beef that are hung for approximately 21days and butchered by our Master Butchers with little or no waste. We make fresh beef mince from trim and cuts of our own beef stock, as well as ready to cook beef products such as steak kebabs, numerous burgers, beef Wellingtons and sausages. All our meat can be marinaded in one of over 14 marinades at no extra cost.
